About the Recipe

This is an overnight cold dashi so ideally make it the evening before you plan to use it.

Ingredients

  • 2 pieces of dried atlantic kombu

  • 4 dried shitake mushrooms

  • 4 fresh shitake mushrooms

  • Fresh leaf of wild garlic

  • 1-litre cold water


Preparation



Place dried shitake & kombu in the lunchbox. Cover with 1 litre cold water and leave in the fridge overnight.


Slice fresh shitake and 1 small leaf of wild garlic.


The next day strain off the liquid into a saucepan on a medium heat.


Add mushrooms and wild garlic to vegan dashi liquid and gently simmer for 10 minutes.


Add 2-3 soaked shitake for a deeper shitake flavour.
