Happy Mother's Day to all the incredible women who keep the world spinning!

Today, for that day that's in it, I'm going to shine some light on a phrase you mightn't know a lot about. A phrase that is on all of our tonics, “Apple Cider Vinegar (with Mother)". I, for one, upon seeing it for the first time, felt a bit stupid that I didn't know what it was. It felt like everyone was in on a secret apart from me! When I started here at Óir Tonics and learned about our ingredients, everything made much more sense. I knew then that it's actually much simpler than it seems. So, I'm spreading some Óir wisdom, and chatting a bit about Apple Cider Vinegars Mammy this Mother's Day for the already Apple Cider Vinegar educated lot, and the folks who haven't the faintest clue. Let’s get into it!

So, what exactly is the Mother in apple cider vinegar, and why does it matter?

Vinegar, coming from the  French vin aigre, translates to sour wine. A sourness no one will contest, having tried ACV for themselves. This sourness comes from the acetic acid content, which allows ACV to undergo controlled fermentation, which is when yeast eats the sugars in apples and converts them into alcohol, and bacteria then turns the alcohol into acetic acid. 

The “Mother” in apple cider vinegar refers to a naturally occurring mixture of beneficial bacteria, enzymes, proteins, and strands of cellulose created during fermentation. During this process, a cloudy, web-like substance develops in the liquid. That is the Mother. Unlike clear, highly filtered vinegars, raw apple cider vinegar with the Mother is unfiltered and unpasteurised, meaning these natural compounds remain present - it's where all goodness we know and love comes from. You've probably noticed the 'bits” floating around an unfiltered bottle of ACV.
